Today I made the greatest gluten free cupcakes I have ever tasted, and what’s even more surprising, they we’re so simple to make!
Ingredients:
[I know I have included 'hundreds and thousands' in this picture, but I didn't use them in the end]
- 150g Doves Gluten Free Self Raising White Flour
- 150g Butter
- 150g Caster Sugar
- 5 tablespoons Milk
- 3 eggs
- 1 teaspoon of Vanilla Extract
- 125g Icing Sugar (for the icing)
- 3 tablespoons Water (for the icing)
Method:
1. Pre – Heat Oven 200° / Fan 180°/ Gas Mark 6
2. In a bowl, add the sugar and butter. Mix together with a spoon until creamy
2. Add the milk, vanilla essence and eggs. Mix together with a whisk or fork
3. Add the flour to the mixture and stir, stir STIR…
4. Once the mixture looks like the image below, it’s ready for the paper cases!
5. Fill the 12 paper cases as show in the image below and then pop in the oven, on the middle shelf for 10/15 mins
6. Watch the cupcakes rise and get excited [try to refrain from opening the oven door!]
7. Eat the cake mixture ..mmmmmm
8. Add 125g of Icing sugar into a bowl 
9. Add 1 tablepsoon of water to the icing sugar and mix, keep adding until you have a thick consistancy
10. When the cupcakes are ready, place on a wire rack to cool down
11. When fully cooled down, use a knife to spread the icing on the cupcakes and than you’re done!
